This is the time of year when we can’t be still. The weather is gorgeous and there is just too much to do outdoors. I don’t want to spend hours in my kitchen when the weather is so inviting, so, I’m bringing back easy with Ground Beef Meals. Hamburger Helper is making it easy on my meal preparation and on my budget with their Free Ground Beef Rebate. For every 3 boxes of Hamburger, Chicken or Tuna Helper I buy, I will receive Free Ground Beef up to $8.06.

I decided to take advantage of the #freebeef and I stocked up on 3 types of our favorite Hamburger Helper Recipes. The only problem with that was trying to decide which to cook first. They are all so quick and easy & we really wanted to cook them all but each meal is plenty for our family and I don’t have to worry about storing our leftovers. There’s never a morsel left over when I make Hamburger Helper. Alyssa suggested the Four Cheese Lasagna. Abby suggested the Cheddar Cheese Melt and I thought the Three Cheese dish would be perfect.

It was time for a coin toss… Since there are only two sides to a coin, that didn’t work out very well.

I finally told the kids that I’d just surprise them and make one of the meals for them. They love surprises and I know how much they love our three favorite easy family dinner selections so I knew that no matter what I made it would be a hit. Unless I selected one girls over the other. Yep, you guessed it, I made my choice which was the Three Cheese and they couldn’t find one thing to fuss about as they gobbled it down.

Making the Three Cheese Hamburger Helper was so quick and simple, it literally took minutes to have a hot meal laid out. If you’ve never made Hamburger Helper before (I can’t begin to imagine that), I’ll walk you through my preparation and really the only thing I do a little differently is to make meatballs instead.

Step 1. Brown your FREE ground beef or do as I did & make meatballs. Because it’s the kids preferred way of eating ground beef and because I’ve made so many meatballs in my lifetime, I can mix them up and have them cooking by the time it takes the normal person to dial a phone number. Almost :).

1 lb ground beef
1/2 onion diced OR 1 teaspoon fresh thyme (I’m using thyme this time)
Bread crumbs from one slice of bread (I throw mine in my food processor)
1 egg
1 teaspoon parsley
1 teaspoon Johnny’s French Dip or 1 teaspoon Worcestershire sauce
Salt & Pepper to taste

Step 2. Drain the FREE GROUND BEEF. Or as in my case, drain the meatballs.

Step 3. Add everything in the Hamburger Helper box into the skillet along with 1 cup of water and 2 cups of milk.

Step 4. Cover and let simmer until done. *Sometimes I add a can of drained peas to the dish while it’s simmering. I sneak in veggies when ever I can.

I’m a fan of cooking shortcuts and have used Hamburger Helper and the chicken variety too. The meatball idea is really unique and I think it brings a little more heartiness and texture to the dish. I think I’ll try it next time I use Hamburger Helper, maybe with turkey meat for an extra twist!

Free is always good, especially with the price of beef going through the roof. Hamburger helper is a great thing to keep on standby when you find yourself short on time.

My mother used to make a lot of Hamburger Helper when I was younger. She would always add some peas, green beans or broccoli to it to give some health to it. Then, she started making her own when the price started to rise. When I first moved in with hubs I bought it. It did’t give us much of a meal. So, I make my own helper now. It actually is a lot cheaper per serving too.

We ate a lot of hamburger helper when we were first married. We would like meatballs in it to liven it up some. My favorite is the cheeseburger mac and hubby’s is stroganoff.

I can’t help but smile while reading this! When I first got married my cooking skills were sorely lacking and I made every hamburger helper flavor there was and fooled my husband into thinking I was a great cook. My grandsons love the beef stroganoff.
