Cinco de Mayo is celebrated and held during my Birthday month which makes it easy for me to remember, lol, May 5th to be exact. With the Cinco de Mayo celebration right around the corner, the good folks at Publix are here to help spice up your fiesta! I got a head start on my fiesta. Today was a good day to get in the kitchen and whip up some tasty Old El Paso apple chicken crunchy tacos with refried beans. I suggest you download your own coupons and visit your local Publix to purchase products from Old El Paso and Avocados from Mexico before Cinco de Mayo sneaks up on you and leaves you unprepared.

I love getting creative with Mexican recipes and I perfected our apple chicken tacos a few years back and have been making them ever since. Sometimes I use turkey in our tacos, sometimes I use cubed beef or ground beef. Today, on this stormy day in Georgia, I was in a chicken mood.

Lets start cooking ladies and gentlemen. As I mentioned, today I’m sharing my special taco recipe with you. Be sure to have the below ingredients on hand if you’d like to try my recipe and you should. It’s amazing.

Old El Paso crunchy taco kit
Old El Paso refried beans
2 chicken breasts
Sherry (1 – 2 Tablespoons) cooking wine
1/4 onion
1 apple peeled
lettuce cut up
tomato diced
Shredded cheese- 3 cheese fiesta blend
Sour cream
Olive oil or oil of preference- 2 Tablespoons (I used corn oil, it’s what I had on hand)

Chop your onion and peel and dice an apple. Green or red works well, whatever you have on hand.

Add both to your hot oil in a medium size frying pan. Simmer.

Wash 2 chicken breast and add to water on the stove. Cook on high until boiling then turn down to medium until done. Add salt and pepper.

While the apple and onion mixture are simmering and the chicken breasts are cooking, dice your tomatoes and cut up your lettuce.

When your chicken is done, dice it and add it to your apple and onion mixture.

Add 1 to 2 Tablespoons of cooking wine.

Let chicken brown lightly.

Preheat oven to 350. Get taco shells ready to pop in oven.

Add 2/3 cup of water to chicken and 1 Tablespoon of taco seasoning mix.

Open your refried beans and put in microwave safe bowl and heat at 2 minutes. Top with mild taco sauce, cheese and sour cream.

Gather all your ingredients and take shells out of the oven.

Say grace and eat.

    When we lived in Florida, we shopped at Publix often. However, now that we are in Pennsylvania, we don’t have that grocery store here. It certainly won’t stop me from trying your delicious recipe though! YUM!!

    Wow!! This looks so good! :) I want to have a Taco night! This is also a pretty unique recipe compared to the regular beef tacos with the toppings. I will definitely be trying it out, it sounds like a great twist! Although I don’t have a Publix near me, I think its great what they’re doing! :) I love this post so much :) Thanks for the food recipe!!

    I love tacos but never would have thought of putting chicken and apples together- not sure why because it is brilliant! Love the combination of sweet and spicy. This would really be a fun and delicious taco for Cinco de Mayo.

    As for my favorite item from El Paso, how can I pick just one? I really love their taco seasoning (members of my family can be picky and won’t eat just any brand). I also really like their refried beans – just the right texture.

      Me too! I’m going to use this recipe for our next family taco night! It looks and sounds amazing…. Better than the normal boring taco that’s for sure! I never thought to include chicken and apples? I never ever would even come up with that. But it sounds so good!
