But…. it was lacking. Now don’t get me wrong, we ate them (albeit I had to make a veggie topping), every single one of them. However I’m not exaggerating when I say, they were really bland and not what I was expecting at all. I found the recipe on Pinterest as I mentioned in my title and when I got to the site, I saw that she had updated the recipe with a YouTube video, so that’s the recipe I used. I’ve been dreaming of making them, ever since I saw the video. They looked so much better than they were but they weren’t difficult to make so I don’t feel like I wasted my time. And because we did eat them (with my experimental topping of flavorful veggies which gave them the pizzazz they needed), I don’t feel like I wasted my money either.

Her ingredients:

Rotisserie chicken OR whole chicken baked and shredded
Shredded cheese
Medium-sized flour tortillas
Butter
Flour
Chicken broth
Sour cream
Green chilies

I’m not going to add the recipe on here or instructions, you can snag it on the YouTube video link above. I just want to share what’s in the dish in case it sounds like a dish you would enjoy. I am going to share what vegetable topping I made though which was made from stuff I already had in my fridge.

My added Ingredients:

  • Diced tomatoes
  • Diced purple onions
  • Diced peeled limes and juice
  • Jalapeno relish
  • Few drops of Avocado Oil

Of course, you could add any ingredients you like but we really enjoyed my last-minute save.

IMO my topping is what saved the dish from sitting in the fridge uneaten. We are a spice-loving family and bland never works in my home (except when my neighbors’ grandkids come to visit me. They prefer bland over spicy). I’m all about sneaking in veggies any way I can, and because this is something I make for toppings for meat and other recipes, the kids like it, and I feel great that they’re getting nutrients from the vegetables.

I’d love to know if you try the original recipe and if you had to add any of your own favorite ingredients to it as well.
