Chicken is a great addition to any meal. It’s full of protein and relatively low in fat, especially if you stick to the white meats. It’s also very flexible and can be put with a huge array of sauces and other flavors to make simple, but delicious meals.

Of course, if you’re not sure about which recipe you want to try, or you’re limited on time, you can always indulge in a delicious charcoal chicken, it can be eaten in or taken away!

1. Chicken, Garlic & Rosemary

This is really simple to make but good enough that you’ll all want it time and time again.

Simply whisk together ½ cup chicken stock with 2tbsp lemon juice, a teaspoon of mustard and a pinch of red pepper flakes. 

Then cook 8 chicken thighs with the skin on, this can be done in a skillet on the stove. After they’ve gone golden flip them over and repeat on the other side.

You can then add your whisked mix and simmer for 2-3 minutes before serving with your choice of vegetables.

2. Chicken & Black Bean Nachos

This is a great option for the grill or the barbeque, you just need a few ingredients and some foil.

Put 3 cups of shredded cooked chicken in a bowl with ½ a chopped onion and 1 cup of enchilada sauce. Mi while adding 1 can of black beans and 2 cups f pepper-jack cheese.

 Once mixed layout your foil, this should do 6 portions. Add a layer of nacho crisps and pour one-sixth of the mixture across the chips. Close the foil up and place on the grill for 6-8 minutes, then enjoy.

3. Chicken Pesto

If you’re after speed then this is the dish for you. Simply place enough pasta in a pan for the number of people you want to feed. Add water and let it simmer for several minutes until its al dente. 

Remove and drain before returning it to the pan. You can now add 1 cup of shredded cooked chicken, 1 jar of pesto sauce, and ½ cup of sliced olives.

Simmer for 3-4 minutes and serve with some garlic bread.

4. Chicken Salad

This is the perfect light bite that can be tailored to meet the needs and tastes of your family or guests.

You’ll need plenty of lettuce, tomatoes, sweetcorn, onions, cucumber, and any other vegetables you’d like to include in your salad.

Simply mix all the ingredients together with 2 cups of cooked shredded chicken, then serve. You can garnish with a little cheese and dried, crispy onion pieces.

5. Chicken Alfredo

You’ll need jumbo pasta shells to create this dish and you’ll have to make your own Alfredo sauce, although you can buy one if you prefer.

Heat 1 tablespoon of olive oil in a pan and add 4 chicken thighs, preferably boneless. Cook them for approximately 10 minutes and then put them to one side. Once they’ve cooled a little you’ll be able to shred them.

Next cook 300g of pasta shells, while this is cooking put a little butter in a frying pan and add ½ cup of cream, a pinch of grated nutmeg, and ½ cup of cheese.

Simmer for a few minutes and then add the shredded chicken to the pan.

As soon as the pasta is cooked, drain it and add it to the frying pan, simmer for another minute before serving.
