I am recovering from the flu/bronchitis/pneumonia and even though my body doesn’t want to cooperate, I still have meal preparations to get through. We eat a lot of rice and not just because it’s delicious and satisfying, but I’ve always heard that white foods (egg whites, baked potato, popcorn, rice… etc…) gives much needed energy, so, when I’m drained, like I have been from my month long illness, I cook more rice than normal. Rice is a really good source of complex carbohydrates (which basically means high fiber foods) which provides the “good” energy. Sugar boost = bad energy, lol.

That means less standing and stirring for me and trust me, right now, it’s worth everything to me as I’m trying to recover and get my strength back. I mentioned that I eat a lot of rice and by that I mean that I eat it with meals and even for a snack. In fact, I had a rice snack mid morning because I didn’t feel like I could even make it to lunch without heading back to bed. Of course I not only made it till lunch time but I’m still up and about, trying to get a little organized and caught up on things I haven’t been able to do.

When I’m feeling better I’m going to check all of the supermarkets in our area to make sure they stock Minute® Ready to Serve Rice (if they don’t I’ll ask that they do) because it so easy to fix and the best part of all is that I don’t have to wash extra dishes from making it. I don’t even have to add water to it.

  1. I never really had a rice pudding before – heck I don’t even know why but I never tried one myself as well. I can’t believe it seems pretty easy to do but I never tried it. I have to try it one of these days or at least… I should be able to give it a try this year as I spend more time inside the kitchen, lol!

  2. I am not a huge fan of rice pudding but I love those Ready to Serve rice cups. I send them with my husband’s lunch all the time and he says they help fill him.

  4. I love rice budding, but I rarely prepare it at home as it takes a lot of time to prepare during my busy work schedules. This ‘Minute Ready to serve’ rice budding seems to be a very convenient one. Will have to check this out. Thanks for sharing.

  5. I am all about easy side dishes or meals that require little prep. I don’t have time to set big meals up! Anyway, the minute rice is already one of my favorites, but I’ve never tried it this way before. It looks really creamy and delicious!

  8. I had never made instant rice before until after my back surgery. I bought everything I could that would save me time from standing because trying to stand or move in my back brace was painful. And now, when I want a snack, I add a little butter and parsley to it or I go for the rice pudding, and in seconds I have a quick and filling hot snack.

  9. You really should try it! It’s one of the simplest desserts to make and here in England we generally have it when it’s cold outside and we need comfort food. I think we have ours more viscous than you all in the USA, but it’s a preference thing. My mum used to make them for my dad when they first were married and he said they were either like soup or you could slice them like a pie…. Mum stopped making them after that 😉

  12. One of my worst habits is binging on junk food when I am too lazy to cook a proper meal. This is the perfect balance between “ready-made” and quality. I like the fact that it comes in different flavours and is something I won’t feel guilty eating.   14. We usually cook rice the long way out of habit, but these would be great for quick lunches or snacks. I haven’t had rice pudding in SUCH a long time–this looks SO good! I’m going to have to whip some up soon. 🙂

  15. That rice pudding looks DELICIOUS. I love how simple it is to make as well. I wasn’t aware that rice was such a good food to eat, though I do love eating it. I don’t make it often, mostly because I’m too lazy to make it, so I love the instant rice option. I’ll have to check these out in the stores!

  16. Joy, Like you I don’t make rice all that often. My husband is pretty conscious about the calories we put into our bodies, and I know that rice has a ton of them. It is great that this rice is ready to serve though- could be so easy for whipping up a quick snack like rice pudding. Probably much better for you than a chocolate bar, which is what I usually go for!

  18. I’ve never actually tried instant rice before. I don’t cook a lot of rice at home, but my daughter’s love it. This sounds like a great product to keep on hand to have some rice ready quickly for their meals.

  19. Rice pudding is soooooo yummy! We can’t have it very often because we’re trying to eat healthier and we end up eating the whole batch of this in one night. lol. Definitely good for an occasional treat, though.

  21. I didn’t know that white foods give you energy which I find interesting. I love minute rice and always get it when I buy rice because of the short cooking time.   22. Oh, that rice pudding sounds so good! I’ll have to pick up some of the ready to serve rices once I return home to the US- would be so great and save so much time cooking!
